Chinese Restaurants to Resume Normal Turnover in Two Months

China's catering industry is emerging from the impact of the severe acute respiratory syndrome (SARS) crisis, and is expected to reach its normal turnover this July and August.

China's catering industry is emerging from the impact of the severe acute respiratory syndrome (SARS) crisis, and is expected to reach its normal turnover this July and August.

A survey published Friday by the China Cuisine Association, a non-governmental organization guiding the business of the country's catering industry, said the industry began the recovery in mid May, and picked up during June.

In such cities as Beijing where the SARS epidemic was worst, 80to 90 percent of the restaurants suspened business during the period. But now most have reopened, with their turnover in June rising about 50 percent over May, and some increasing five or six-fold.

Restaurants in places only slightly affected by SARS also reported their turnover increase around 15 percent in June, compared with May, according to the survey.

The recovery of low and middle grade restaurants, including snack shops and some chain restaurants, was even faster than high-grade restaurants, like those in major hotels.

The experience of the SARS crisis also helped the catering industry to speed up reforms to cope with the new market demand.

Statistics showed, however, that the current turnover of the whole catering industry was still lower than the same period of last year, by about 10 to 15 percent. Most restaurants were still failing to reach the level of the pre-SARS period.

But the investigation also indicated the expectation that the catering industry would recover to its normal turnover by this July and August.
