Her victory in the division added the fourth gold for China in the power sport in Athens after wins by Zhang Guozheng and Shi Zhiyong in the men's competition and Chen Yanqing in the women's.
The teenager faced no threat from her rivals on the platform and lifted the barbell in her own form, breaking her own world records in the snatch, jerk and the total.
With 122.5 in the snatch and 153 in the jerk, Liu Chunhong had a combined winning lift of 275kg.
Eszter Krutzler of Hungary and Russia's Zarema Kasaeva tied on 262.5kg in their own personal battle for second spot with Krutzler taking the silver on lower body weight.
The 17-year-old Kasaeva, fifth at last year's World Championships, established a record of her own by becoming the youngest ever Olympic weightlifting medallist.
"I am absolutely thrilled - everything is ahead of me in the sport," she said. "Possibly in the future I will be a gold medallist - I will gear my training towards that."
Liu Chunhong, world lifter of the year, has been the hottest favorite for the title.
"There was a bit of pressure but I have learned from previous lessons to be as relaxed as possible," said Liu.
Liu, who took up weightlifting when she was 11, lived up to her billing as a superstar lifter with a record breaking display in the opening snatch.
She established Olympic records at 115kg and 120kg before going for the big one, her own world record established at last year's World Championships.
With seeming ease she hoisted a massive 122.5kg to beat the mark by 2.5kg. In under two years, Liu has increased the world record by an incredible 7kg.
The record lift gave the Chinese a 5kg advantage over Kasaeva and Krutzler. They stayed with the teen titan in the early stages but could not match Liu's power lifting at the big weights.
It was instant replay in the clean and jerk with Liu hoisting 153kg to beat the old world mark by 0.5kg and also establish a new world record of 275kg for the total.
