Ham cuisine was originated in the Northern Song Dynasty. The famous general- Zongze- defeated enemies and came back to hometown. To repay his braveness in battle, people send legs of pork to Zongze and let him to bring legs back to Kaifeng (capital of Northern Song Dynasty) to reward his officers. In order to keep the food quality during the long journey, people salted the legs which became the famous Jinhua ham now days after the production process constantly improved by generations.
