As winter approaches and the temperature falls, it comes to the best season of a year for brewing rice wine in Shaoxing. Rice wine, with a history of thousands of years, is regarded as one of the three most time-honored wines in the world. The techniques of brewing Shaoxing rice wine was listed as a national intangible cultural heritage in 2006.
